Today is my 25th Birthday, time has passed by so fast that I can hardly believe it! I made some special banana – cranberry cupcakes with a cream cheese cover for work.
The recipe was really easy here I share with you:
Banana – cranberry cupcakes
- 250 grButter
- 3 Eggs
- 2 cups of flour
- 3/4 cup of sugar
- 1/3 cup sour cream
- 1 pkg of baking powder
- 1 table spoon of Vanilla extract
- 3 Bananas
- 200 gr Cranberry Jam
Cream Cheese Frosting
- 150 gr cream cheese
- 4 cups of icing sugar
- 250 gr of melted butter
Start by mixing in a bowl the softened butter with the sugar, in a separate bowl mix the eggs with the vanilla extract. Add the second mixure (eggs and vanilla) to the first mixure, then add the rest of the ingredients until you get a thick consistency for the cupcake pan or cupcake wrappers to be filled in.
Fill in the cupcake wrappers or cupcakes pan with the mixture and heat for 20 minutes at 180 degrees in the oven.
Decorate the cupcakes with the cream cheese frosting, by mixing the melted butter with the cream cheese and adding one cup at the time of the icing sugar.
